When taken daily, this simple recipe is one of the easiest ways to strengthen digestion, increase immunity, and gently warm up the body. According to Chinese anatomy, the stomach is responsible for descending turbid qi downward to be expelled through the bowels and the spleen is responsible for lifting the clear qi to the heart-mind so we can think and feel clearly. Drinking this mildly spicy ginger tea is an excellent way to strengthen these organs so that they function optimally and increase your resilience to cold weather.

Combine in a small sauce pan:
- 1 cup water
- 1/4” slice unpeeled fresh ginger (about 3-4 grams)

Cover, bring to boil, then reduce heat to simmer for 5-10 minutes. Strain and drink hot first thing in the morning before breakfast. Add a small amount of honey if you like, but the main flavor should be mildly spicy when you drink it.
